Thai Green Chicken Curry


After all that kiddy party food yesterday, I needed something cleansing, hot, spicy and soothing all at the same time. So here it is:

Thai Green Chicken Curry


Chicken thigh meat, chopped into smallish pieces

Green curry paste

butternut pumpkin, chopped

tenderstem broccoli sliced into shortish lengths

Light coconut milk

tsp brown sugar

fresh coriander (cilantro)


Fry chicken in a bit of olive oil, add 2-3tblsns curry paste, keep cooking.

Add butternut pumpkin and coconut milk.

simmer for 10-15mins

Add broccoli and some of the coriander

Simmer until veg is soft

Serve with steamed white rice and the rest of the coriander.

Mmmmm, comfort food.



  1. gosh i love Thai curry’s, my comfort food is a red chicken curry cooked from scratch made extra spicey.

  2. Yum, I love red chicken curry too. I like the idea of making it from scratch but with a two year old and one boy sick, I just didn’t have the energy… 🙂

  3. Sounds yummy. I’ve got two sick kids and a husband traveling this week, so it’s Amy’s and Kashi frozen entrees for my dinner. I can’t wait for some real Indian food! (And a shower, LOL.)
