Pumpkin soup for lunch!

Well, I say pumpkin soup. Really it’s a curried root vegetable soup I guess….

Ingredients:

Chopped carrots, butternut pumpkin, onions and sweet potato

Curry powder

Chicken or vegetable stock

1 Tblspn olive oil

Method:

Pile chopped vegetables into a saucepan with the oil. Cook for 5 mins.

Sprinkle a teaspoon of curry powder over them.

Pour in stock to cover veg. Cook until soft.

Puree or mash.

Serve hot with fresh bread and cheese.

Yum!
